Fermoy Estate Cabernet Sauvignon 2000
This promising, Mediterranean-climate style red has a stunning depth of colour. It displays an attractive nose of intense sweet blackcurrant aromas mingled with hints of eucalyptus, herbs and nutty oak. This wine has great body weight on the palate with concentrated, sweet, blackcurrant flavours balanced by a good grip of acid. A clever use of oak balances the flavours and supports time in the bottle, allowing this beauty to continue to develop for six years or more.
Sommelier's Tip: Serve with satay beef.

Fermoy Estate Merlot 2001
One of the better made Australian Merlots of the current year, it has a vibrant purple-red colour with distinctive, candy-like, sherry characters accompanied by geranium, jasmine and shaved pine scents on the nose. This silky, smooth style has a bundle of rich sweet berry fruit with a great depth of ripe tannins. Drinking well now with primary fruit characters to the fore, this wine will develop further over the next few years.
Sommelier's Tip: Serve with roasted beef.

Fermoy Sauvignon Blanc 2002
This excellent Sauvignon Blanc is one of the best from Margaret River this season. The nose is seductively aromatic with scents of cool climate pink grapefruit, green capsicum, passionfruit and freshly cut grass. The palate is fresh and lively and offers well balanced grapefruit and passionfruit flavours with a soft, clean acid finish that lingers elegantly. Keep for 2-3 years.

Sommelier's Tip: Serve with white fish fillets.

Fern Hill Semillon 1997
This wine is a fine example of a classic Australian Semillon. A pale straw in colour, the wine exudes a wonderful citrus, herbaceous and cashew nut aroma. On the palate it displays a complex richness of fruit flavours. This Semillon finishes with a creamy, oily texture, finely balanced by a good acid depth. It will age well and can be kept for up to ten years.
Sommelier's Tip: This one can handle spicy chicken dishes!

Fern Hill Estate Shiraz 1996
A brick red colour in the glass, this wine exudes a rich bouquet of red berries combined with the scents of freshly chopped mint and crushed eucalyptus leaves. The palate reveals ripe blackberry fruit spiced with cinnamon and cloves. The wine finishes with the tightness of fine tannins which are well integrated by the judicious use of American oak. This fabulous Shiraz can be laid down to rest and develop for up to ten years.
Sommelier's Tip: Serve it to your friends with spicy beef ragout.
