Salisbury Cabernet Sauvignon 2000
This classic blend of Shiraz, Cabernet Sauvignon and Malbec grapes has a cherry hue. A nose of damp earth, dry spice, cinnamon and plum-cherry perfumes exudes from the glass. The palate displays an elegance of soft ripe fruit balanced by smooth tannins and oak barrel undertones. With elegant, sweet fruit mid-palate, it is a trim, tight wine and is very easy to enjoy now.
Sommelier's Tip: Great with spaghetti marinara.

Salisbury Chardonnay 1998
A rich yellow in hue, this Chardonnay gives off fragrances of apricot and white peach underscored by spices of American oak. This medium bodied wine follows with apricot and peach on the palate with the addition of freshly squeezed lemon, and concludes with some lively acid at the finish. This wine can be cellared for up to three years.
Sommelier's Tip: Start your meal with this wine and your best soup.

Salisbury Chardonnay 2000
This medium-full, yellow-coloured wine is a relief after the deluge of heavy, oaky, over-worked Chardonnays of recent times. The nose exudes creamy melon, green apple and light oak aromas with a delicate balance of melon fruit on the palate. The finish is one of long, honey flavours. It drinks well now.
Sommelier's Tip: Great with cold seafood.

Salisbury Riesling 1998
Pale-coloured with typical flowery, stone-fruit Riesling aromas, this wine is clean and fresh. On the palate it is fresh, dry and tangy with good balance and depth of lemon, floral, lime flavours with good weight. A bargain. Well worth cellaring for 5 years.
Sommelier's Tip: Serve with chicken liver terrine.

Salisbury Semillon Chardonnay 2000
This new offering of the Salisbury range is a delicate, refreshing, vibrant, young wine. It has no apparent wood but is crisp and clean with fresh snow-pea, dried pineapple, candy melon and lemon flavours. Up-front, it has generous melon and lemon fruit on the palate with a hint of sweetness. The balance is impeccable. Ready to drink now.
Sommelier's Tip: Goes well with prawn risotto.

Salisbury Semillon Chardonnay 1998
This pale, straw-coloured wine is dominated by passionfruit, guava and creamy yeast aromas with some meaty characters. It has zingy flavours of lemon combined with extracts of fresh tropical fruit on the palate.
Sommelier's Tip: A good blend to match with chicken satay.

A deep purple in colour, the nose of this beauty offers toasty-barrel, chocolate, vanilla, dusty and plumy aromas. In the mouth, its savory flavours are smooth, supple and easy to enjoy. The finish is long with soft tannin that balance the fruit. Ready to drink now and for the next couple of years.

This straightforward, very fresh, purple-hued young Clare red is loaded with scents of freshly-turned earth, spice, berries and forest floor aromas. The palate is rich and solid, with generously smooth tannin. A crowd-pleaser, with balanced grip and leading charge. Ready to drink now.
Sommelier's Tip: Great with Osso Bucco.

Scarborough Chardonnay 1996
If you like big white wines then this is the wine for you. A very deep yellow in colour, it has a concentrated fruity nose with overtones of peach and apricot. This is a wine of fullness and concentration of flavour. It has depth and character, richness yet elegance. This classic wine cannot disappoint. It is a well made benchmark for a full-bodied Hunter Valley Chardonnay. It will keep well in the cellar for five to ten years.
Sommelier's Tip: Compliment a veal dish.

Storm Ridge Chardonnay 2000
After the storm comes an elegantly styled wine with rich peach, ripe melon and cashew nut on the nose blended with a hint of oak. This perfect match for tropical fruit salad has a concentrated, ripe, citrus and melon fruit flavours with a crisp, nutty wood / fruit acid building to a long, lingering finish.
Sommelier's Tip: Serve with prawns and oysters.

Storm Ridge Unoaked Chardonnay 1998
A pale yellow in colour, the nose is a lovely blend of melon and green apple with overtones of passionfruit. The palate displays some fine flavour combinations of green apple with complexities of tropical fruit which culminates in a luscious fruity finish. In its prime now, this lighter bodied style of wine is easy to drink and is perfect for hot, sunny days.
Sommelier's Tip: Use its fruity lightness to balance a meat terrine!

Storm Ridge Merlot 1999
From the Yarra Valley in Victoria comes a Red of power and length. Deep and concentrated in colour with bright floral/blackcurrant, raspberry fruit and cedary oak aromas, this wine is very fine, elegant and stylish. Intensely concentrated fruit on the palate is held well in a firm, integrated structure. Cellar for up to six years.

Storm Ridge Pinot Noir 1999
In the glass, this wine is a delicate strawberry colour and exudes sweet scents of black cherry and ripe plum jam. This well balanced, aromatic pinot has a lovely depth of delicate fruit on the palate and finishes with softness and elegance.
Sommelier's Tip: Compliment grilled fish with this one.

Storm Ridge Sauvignon Blanc 2001
This Margaret River Sauvignon Blanc, selected by Michael Warrant from Badger's Brook vineyards, has a light green and yellow hue. It has a fragrance of peas, paw-paw, banana and freshly cut grass. The palate displays intense extracts of tropical fruit flavours, finely balanced by the pleasing sharpness of finely cut grass as the palate concludes. This light style has a good depth of fruit and a soft, clean finish that lingers.
Sommelier's Tip: Serve with fresh seafood.

Sun Valley Semillon Chardonnay 1999
Bored with Chardonnay? Try it with Semillon! This crisp, dry style of wine has lifted fresh oak and stylish fruit on the nose. Full, rich and clean on the palate, it is balanced by tantalizing melon oak. Great to drink now.

Sun Valley Shiraz Cabernet 1999
Yet another lovely quaffable Australian red made from Shiraz and Cabernet Sauvignon. The wine has a reddish hue with sweet, ripe, redberry, spice, ginger and clove scents. Well-balanced on the palate it has plenty of fruit flavour offset by warm acid at the finish. Lovely now, but will keep at least three years.
Sommelier's Tip: Serve with grilled lamb chops.

Synergy Dry White 1998
Blended from Semillon and Sauvignon Blanc, this wine is grassy with hints of gooseberry combined with tropical fruit on the nose. The palate is youthful and fresh with lively tropical fruit flavours balanced with a fine acid to leave a crisp, clean sensation in the mouth. A good wine to drink now but can be left for up to four years.
Sommelier's Tip: Serve with your favourite fish dish.

A ruby brick colour in the glass, this wine has attractive aromas of licorice, fresh mint, spice and raspberry fruit. On the palate it is full and rich with a soft, well balanced tannin. The wine finishes with a depth of gentle fruit. This wine is good to drink over the the next five years.
Sommelier's Tip: Offer with a plate of antipasto.
