Trentham Ruby Sparkling Red 1998
This delightful, pale, crimson red, sparkling wine has a bouquet of raisins with overtones of warm raspberry, spicy stew and dried cherry fruit. This cabernet blend is a smooth, easy-drinking red with heaps of ripe fruit, elegance and lovely balance at the finish. A great, fun wine.
Sommelier's Tip: A perfect beginning to a perfect evening.

Barramundi Sparkling Brut
This pale straw coloured sparkling wine exudes scents of honey, smoky hazelnuts and minerals. In the mouth it is dry and light with some bite and lingering fruit intensity. Cellar for only a few years.

Made from Pinot Noir and Chardonnay grapes, this refined sparkling Australian wine has a nose of almonds laced with rich, dry apricot flavours. Creamy on the palate, this delightful wine is light and fruity with a depth and complexity at the finish.

Ivanhoe Sparkling Shiraz 1998
This rather special sparkling wine is made from red grapes and is a gorgeous deep purple-red colour. The nose displays a tantalizing combination of fruit, pepper, spice and licorice. Its full fruit flavour bursts onto the palate with a refreshing lightness and great richness which culminates in a satisfying length at the finish. A great wine to treat your friends with during the festive season.
Sommelier's Tip: Great as an aperitif or to drink by itself.

Sun Valley Sparkling Brut N/V
Take a moment to observe the pale straw colour and fine bubbles of this sparkling wine. The nose has scents of nuts and apricots which is repeated on the palate. This light-bodied wine with a good acid finish can be enjoyed for any occasion.
